Safe internal temperatures for air frying
Safe minimum internal temperatures do not change when you use an air fryer. Poultry is safe at 165°F (74°C), whole cuts of beef, pork, veal and lamb at 145°F (63°C) with a 3-minute rest, ground meat at 160°F (71°C), and fish at 145°F (63°C).
An air fryer changes how long food takes. It does not change how hot the inside of that food needs to get.
The USDA states this without any hedging: “Each air fryer will have varying cooking times due to the size and power of the appliance, but the safe internal temperature is always the same.”
Every cook time on this site is sourced from a manufacturer and is still only a starting point, because your machine is not the machine they tested. The numbers below are different in kind. They are not estimates and they do not flex.

Every food page on this site pulls its safety figure from that chart rather than from the manufacturer’s cooking guidance, and shows the published Celsius value rather than converting the Fahrenheit one. That distinction matters: 160°F converts to 71.1°C, and rounding it the way we round cooking temperatures would display 70°C — one degree below the published minimum.
The three numbers people mix up
Poultry is 165°F, and there are no sub-categories
Every cut. Breast, thigh, wing, drumstick, whole bird, ground, giblets, and stuffing that was cooked inside a bird. There is no “thigh can go lower” and no “organic chicken is different”.
Thigh meat is more pleasant above 165°F than breast meat is, because its collagen breaks down and it becomes more tender rather than less. That is a quality observation, not a safety exemption in either direction.
Whole cuts are 145°F. Minced is 160°F
This is the single most commonly confused pair, and it explains why pork chops and sausages — the same animal — have different targets.
A whole muscle is effectively sterile on the inside. Bacteria live on the surface, which is the part that gets hottest. Mincing takes that surface and distributes it throughout the meat, so there is no longer an inside that heat can skip.
It is why a steak can be served pink and a burger really cannot.
Pork is 145°F, not 160°F
If you learned to cook pork until it ran white throughout, that advice is decades out of date. The USDA’s chart puts pork steaks, roasts and chops at 145°F with a three-minute rest — identical to beef.
A faint blush of pink in a rested pork chop at 145°F is correct. Pork has very little intramuscular fat, so the fifteen degrees between 145°F and 160°F is the difference between juicy and dry.
Minced pork is still 160°F, for the reason above.
The rest time is part of the instruction
Where the chart lists a rest, it is not a serving suggestion. Temperature continues to rise after the food leaves the heat, and the three minutes at temperature is doing part of the safety work.
Only whole cuts of beef, bison, veal, goat, lamb, pork and raw ham carry a rest in the chart. Poultry and minced meat do not.
Where to put the probe
A thermometer that is in the wrong place is worse than no thermometer, because it gives you confidence.
Thickest part, not the middle of the item. These are frequently different things. A chicken breast tapers, so a probe pushed straight down from the top usually lands in the thin section and reads done several minutes early. Go in from the side, along the length.
Away from bone. Bone holds a different temperature to the meat around it. On bone-in thighs and drumsticks, probe the thickest muscle from the side and stop short of contact.
The thigh, on a whole bird. Breast and thigh finish minutes apart and the deep thigh joint is always last. A whole chicken whose breast reads 165°F may have a thigh at 155°F.
The largest piece, in a batch. Then trust the batch — but only if the pieces were genuinely similar in size.
What is not a doneness test
Juices running clear. This is folklore. Juice colour depends on myoglobin and on how the bird was processed and stored, not reliably on temperature.
Colour of the meat. Minced beef is notoriously unreliable here — patties can stay pink at temperature or go grey below it depending on packing and air exposure.
Time. Every cook time on this site, and everywhere else, assumes a machine and a piece of food that are not yours.
One food the USDA says not to air fry
Buried in the FSIS air fryer page is a specific instruction that almost nobody knows about: “For raw, stuffed breaded chicken breast products, do not cook in the air fryer. Always follow the manufacturer cooking instructions.”
That is chicken Kiev and its supermarket relatives — the ones sold raw, breaded, and filled. They look cooked on the outside before the raw chicken around the filling has reached temperature. This is covered in foods you should never air fry.

Buy a thermometer. An instant-read probe costs less than a single takeaway and it converts every cook time on this site from a guess into a check. It is the only piece of equipment that makes air frying meat genuinely reliable, and no amount of sourcing on our part substitutes for it.

Does an air fryer change the safe internal temperature?

What temperature should chicken be in an air fryer?
165°F (74°C), measured at the thickest part with a food thermometer. This applies to every cut — whole bird, breasts, legs, thighs, wings and ground poultry — with no exceptions and no adjustment for the appliance.
Why is ground beef 160°F when steak is only 145°F?
Grinding moves bacteria from the surface of the meat, where searing would kill them, into the middle. A whole steak is effectively sterile inside, so surface heat is enough. Minced meat has no inside in that sense.
Do shrimp have a safe internal temperature?
No. FoodSafety.gov gives a visual test for shrimp, lobster, crab and scallops rather than a temperature: cook until the flesh is pearly or white, and opaque.
