Air fryer vs oven: what actually changes

An air fryer is a countertop convection oven. It costs less to run than a full-size oven mainly because it heats a much smaller chamber and needs little preheating, not because it is more efficient per unit of heat. Ninja measured its machines cutting cook times by up to 65% against a fan oven.

The USDA settles the definitional question in one sentence: air fryers are “essentially countertop convection ovens”.

That is not a dismissal. Three differences follow from the size, and they are the reason the thing has taken over so many kitchens.

What is actually different

The chamber is tiny. A domestic oven holds perhaps 60 litres of air plus a lot of steel. An air fryer basket holds five or six. Heating less air and less metal is faster, and it is where nearly all the energy saving comes from.

The fan is fast and close. Oven fans circulate; air fryer fans blast. The air temperature may be identical but the rate of heat transfer to the food surface is much higher, which is why you drop the dial when converting a recipe. That is covered properly in the 25-degree rule.

Food sits in a perforated basket. Air reaches the underside. On an oven tray the bottom of a chip is in contact with hot metal and its own steam; in a basket it is in the airflow. This is the entire reason chips work better.

Running cost, honestly

This is what people actually want to know, and most answers are hand-waving.

The mechanism is simple: an air fryer does not use less energy per unit of heat. It uses less energy because it heats a smaller space for less time.

A typical air fryer draws 1,400–1,800 W. A domestic electric oven draws 2,000–3,000 W. But wattage is the smaller part of the story — the bigger part is duration, and Ninja’s published figures show how large that gap can get:

Then add preheating. An oven takes ten to fifteen minutes to come up to temperature; an air fryer takes two to three. On a twenty-minute cook, that alone is most of the difference.

Rough arithmetic for a baked potato. A 2,500 W oven for 80 minutes plus 12 minutes of preheat is about 3.8 kWh. A 1,500 W air fryer for 40 minutes plus 3 minutes is about 1.1 kWh. That is roughly a third — and the potato takes half the time.

Where it reverses. Cook for six people and the oven wins, because you can fill it. An air fryer cooking four batches back to back is running for four times as long, and you have lost the advantage. The crossover is somewhere around two or three basket-loads.

What an oven still does better

Volume. Obvious but decisive. A full roast dinner does not fit.

Anything large. Cosori’s whole chicken figure assumes 4.5 lb, which is near the ceiling for a 6 qt basket. See whole chicken.

Baking that needs to rise gently. An air fryer’s fan sets and browns the top of a batter before the middle has risen, which is why Cosori runs cookies and cakes at 300°F — 50 to 75 degrees below a normal recipe. It works, but an oven is the better tool for a layer cake.

Wet cooking. Braising, stewing, anything with standing liquid. Wrong appliance.

Even, gentle heat. Slow-roasting a shoulder for four hours is an oven job.

What the air fryer does better

Anything frozen. The fan drives off surface meltwater before it can soak into the coating. This is the single clearest win and is covered in cooking from frozen.

Anything you want crisp. Chips, skin-on chicken, roast vegetables. The basket plus the airflow beats a tray.

Reheating. A microwave makes leftovers soft; an air fryer makes them crisp again.

Small quantities. Cooking for one or two in a 60-litre oven is the definition of waste.

The energy question, in more detail

Because “is it cheaper to run” is the question people actually type, it is worth being precise about where the saving comes from — and where it does not.

It is not efficiency. A kilowatt-hour of electricity produces the same amount of heat in either appliance. Nothing about an air fryer converts electricity to heat more effectively than an oven element does.

It is volume and time. You are heating five litres instead of sixty, for twenty minutes instead of fifty, with a two-minute warm-up instead of twelve. Each of those is a multiplier and they compound.

It is also what you are not heating. An oven heats its walls, its door, its shelves and its racks, all of which take energy and none of which end up as cooked food. In summer it heats your kitchen too, which you may then pay again to cool.

Where the saving disappears. Batch cooking. If dinner needs three basket-loads run back to back, the machine is on for three times as long and the oven’s ability to cook everything at once starts to win. The crossover is somewhere around two or three loads, though the exact point depends on your two appliances.

A caveat on the claims. Manufacturer figures like Ninja’s “up to 65% faster” are measured on their own machines against their own comparison oven, with specific foods — sausages and fish fingers in that case. “Up to” is doing real work in that sentence. Treat it as an upper bound rather than a typical result, and calibrate against your own machine as described in basket size and wattage.

Does it actually taste different?

Yes, and not always for the better. The high surface heat and constant airflow dry the exterior more aggressively than an oven, which is exactly what you want for a chip and not at all what you want for a chicken breast without skin.

That is why lean, skinless food — chicken breast, flank steak, white fish — needs closer attention in an air fryer than in an oven. There is less margin.
