Preheating: when it matters and when it is a waste of time
Preheating an air fryer matters most for short cooks and for anything you want to sear. For a three to five minute cook, skipping the preheat can double the time. For cooks over about twenty minutes the difference is small enough to ignore.
Whether to preheat is treated as a matter of opinion. It is not — it is a matter of arithmetic, and the answer changes depending on how long the food is in there.
The rule
The shorter the cook, the more preheating matters.
An air fryer takes roughly two to three minutes to reach temperature. That is a fixed cost. What varies is how large a fraction of your cook it represents.

Shrimp at 450°F for three to five minutes is the clearest case in the index. Put shrimp into a cold machine and the first two minutes are spent with the chamber climbing through temperatures too low to do anything useful. A three-minute cook becomes a five or six minute cook, and shrimp does not tolerate that — it goes from tender to rubbery in that window.
Green beans at four to eight minutes are the same story.
At the other end, a baked potato at thirty to forty minutes does not care. Three minutes of warm-up inside a forty-minute cook is noise.
The second reason: searing
Beyond arithmetic, there is a category of food where the initial contact temperature determines the result rather than the average.
Anything you want to sear — steak, ribeye, scallops, pork chops — relies on the surface hitting high heat immediately. Cosori runs all of these at 450°F, the top of most dials, for exactly this reason.
Put a steak into a cold basket and by the time the chamber reaches 450°F the surface has already been drying out slowly at 250°F, which is precisely how you get a grey band instead of a crust. The machine reaching the right temperature eventually is not the same as the food meeting that temperature at the start.
The third reason: frozen food
Frozen food benefits from preheating in a way that is slightly counterintuitive.
A hot chamber flash-evaporates the surface ice before it can melt and soak into the coating. A cold chamber warms slowly through the range where ice melts to water, and that water gets absorbed by the breadcrumb. This is a large part of why frozen fries from a cold start are noticeably less crisp.
How long, actually
Two to three minutes at the target temperature covers most basket machines. Larger oven-style and dual-basket units take four to five, simply because there is more air and more metal to heat.
Longer than that achieves nothing. An air fryer has very little thermal mass — that is the whole design — so it has nowhere to store surplus heat. Once the chamber is at temperature, it is at temperature.
If your machine has a preheat setting, use it. If it does not, run it empty at the cooking temperature for three minutes.
Does it waste energy?
Not meaningfully. Three minutes of a 1,500 W machine is about 0.075 kWh, which at typical domestic rates is a fraction of a penny or cent.
For context, this is a large part of why air fryers use less energy than ovens overall. Ninja makes the point directly: air fryers require little to no preheat time compared with an oven, which can take ten to fifteen minutes to come up to temperature and heats a chamber many times larger. The USDA’s own framing is that air fryers “cook food faster and consume less energy” than ovens.
What “at temperature” actually means
A detail that explains a lot of inconsistent results: most air fryers do not hold a steady temperature. They cycle. The element runs until a sensor is satisfied, switches off, and comes back on when the reading drops.
That means “400°F” is an average with a swing either side of it, and the size of that swing varies between machines. A cheap machine with a slow sensor may overshoot and undershoot by a wide margin; a better one holds tighter.
Two consequences worth knowing:
A preheated machine cycles around the target from the start. A cold one climbs through everything below it first, which is time spent at temperatures that dry food without browning it — the worst of both.
A cold, full basket drags the average down. Food is thermal mass. Drop a kilogram of frozen chips into a preheated chamber and the temperature falls sharply before recovering, which is one more reason a lighter load cooks better than a heavy one.
Does the machine’s own “preheat” light mean anything?
On many models it is a timer rather than a measurement — it counts a fixed number of minutes and then beeps, regardless of whether the chamber got there. On others it is genuinely sensor-driven.
You can find out in a minute: run the preheat cycle, then immediately run it again. If the second cycle is much shorter than the first, it is measuring. If it takes exactly as long from an already-hot start, it is counting.
Either way, three minutes at temperature is enough, and a machine that beeps sooner has probably not finished.
When you genuinely should not preheat
Never preheat with loose parchment in the basket. An empty basket has enough airflow to lift baking paper into the element. This is a fire risk, and it is the one preheating rule that is not about food quality. Put the parchment in with the food on top of it, after the preheat.
Do not preheat if you are cooking in back-to-back batches. The machine is already hot. Preheating between batches just delays the second batch.
The practical summary
Preheat if the cook is under ten minutes, if you want a sear, or if the food is frozen. Otherwise it is optional and the difference will be a minute or two.
