Your first week with an air fryer
The four habits that make an air fryer work are cooking in a single layer, preheating for short cooks, emptying the drawer after fatty food, and checking meat with a thermometer rather than a timer. Start with frozen food, which is what the machine does best.
Most air fryers that end up in a cupboard were not bad machines. They were used the way an oven is used, which does not work, and then quietly abandoned.
Four habits are the difference. Here they are, and what to cook while you learn them.
Before the first cook
Wash the basket and drawer in warm soapy water and dry them. There is no seasoning step — this is not cast iron.
Then run the machine empty at about 400°F for five minutes with a window open. New appliances carry manufacturing residue and it has a distinct smell that you do not want in your first batch of chips. Some smoke on that first run is normal.
Day one: cook frozen chips
Not because it is exciting, but because it is diagnostic.
Frozen chips need no oil, no preparation and no judgement about doneness — you can see exactly when they are right. Cosori puts thin-cut fries at 395°F for 14 to 18 minutes with a shake at 8.
Cook them in a single layer, preheat for three minutes, and note the time you actually pull them at.
That number is your calibration. Done at 12 minutes? Your machine runs about 20% fast, and you can apply that to every published time from now on. Needed 20? It runs slow. Most machines land within 15% either way. The method is in basket size and wattage.
The four habits
1. Single layer, always
This is the one that matters most, and it is the one that feels most wasteful.
The USDA is blunt about it: “Overcrowding the appliance can prevent enough air circulation to properly cook the food. When air frying a large amount of food, it may be best to do so in batches rather than all at once.”
Half a basket cooked twice genuinely beats a full basket cooked once, because the full basket takes longer and comes out worse. Food piled two deep steams itself. This is the cause of nearly every complaint about soggy air fryer food.
2. Preheat short cooks, skip it for long ones
Two to three minutes. It matters enormously for a five-minute cook and barely at all for a forty-minute one, because the preheat is a fixed cost and what changes is how big a share of the total it represents.
Shrimp at three to five minutes needs it. A baked potato at forty does not. Full detail in preheating.
3. Empty the drawer after fatty food
Bacon, wings and sausages all shed a real amount of fat into the drawer, where on many models it sits over the element and smokes on your next cook.

4. Check meat with a thermometer, not the clock
Every cook time anywhere — including every one on this site — was measured on somebody else’s machine with somebody else’s piece of chicken.

A first week worth cooking
Day 1 — Frozen chips. Calibration.
Day 2 — Chicken wings. No oil needed at all. Your first thermometer check. Sauce them after, in a bowl.
Day 3 — Brussels sprouts or broccoli. Higher heat than you expect — 415–425°F — and a teaspoon of oil tossed through. This is where people discover the machine is not only for beige food.
Day 4 — Boneless chicken thighs. Eight to fourteen minutes and far more forgiving than breast. If you have dried out chicken before, this is the cut that fixes it.
Day 5 — Bacon. Fast, and it teaches you the drawer habit whether you like it or not.
Day 6 — Reheat something. Yesterday’s pizza or chips. This is where most people realise they will use the machine every day. See reheating leftovers.

Three things that will surprise you
Vegetables want more heat than you expect. Everybody arrives with oven habits and reaches for 350–375°F. Cosori’s chart runs broccoli, carrots and cauliflower at 425°F and eggplant at 435°F. At 350°F a vegetable dehydrates slowly; at 425°F it browns. Browning is the entire point, and the first time you cook sprouts properly hot is usually the moment the machine stops being a chip fryer.
Baking goes the other way. Cosori puts cookies and cupcakes at 300°F, which is 50 to 75 degrees below what the recipe on the packet says. The fan sets and colours the top of a batter long before the middle has risen, so the only fix is lower and slower. Frozen food is where the machine genuinely beats an oven. Not marginally — obviously. An oven melts the surface ice into the coating and the coating never recovers. The fan removes it as it appears. If you only ever use the thing for frozen chips and nuggets, it has still earned its worktop space.
Cleaning, so it does not become a chore
Wash the basket and the drawer after each use. The drawer matters more than people think, because rendered fat collects there and on many models it sits over the element, where it smokes the next time you switch on.
Every few weeks, let the machine cool completely and wipe the heating element itself. Splatter lands upward as well as dripping down, and baked-on residue is the reason an air fryer starts smoking when it is empty.
Do not put anything abrasive on a non-stick basket, and be wary of aerosol cooking sprays — many contain additives that build a sticky brown film on non-stick surfaces that is very difficult to remove. A refillable pump mister with plain oil avoids the problem entirely. More in how much oil to use.
The one thing to buy
An instant-read thermometer. Nothing else — not racks, not silicone moulds, not a liner subscription — changes the reliability of the machine as much.
What not to expect
It will not replace your oven for a roast dinner or a layer cake. It is worse at volume, worse at baking, and useless for anything wet. What it is better at is almost everything you cook on a weeknight for one or two people.
